This is nothing like discovering a great new cookbook. It’s human nature to form habits, good or bad, and when you’re trying to be healthy – sometimes food can seem boring and bland if all you’re eating is eggs for breakfast every morning. I’ve been loving quite a few (see my collection of favorites coming out soon), but right now my new go-to is the Trim Healthy Mama’s Trim Healthy Table by Pearl Barrett and Serene Allison.
These are two of your average moms who took everyday recipes and made them great again. This cookbook is a great segue from their first book – really resonating with moms because it talks about everyday issues – finding time in the kitchen, dealing with picky eaters, finding the funds to eat healthy and “organic” all the time – and reminding us that we’re not alone.
Inside, these recipes aren’t over-the-top with tons of hard-to-find ingredients, in fact, many of the ingredients you might already have on hand, and the best part – they’re delicious, fast and SHOCKER – not bad for you. They remind you (and help you stay on track) to make “S Meals” or satisfying meals – ones that will fill you up with good fats, protein and still taste pretty yummy – and “E Meals” or energizing meals that will use carbs to boost your energy, not load you down with starches and sugars.
I’ve been doing a lot of research on better eating habits, and I love that they start by reminding us all meals should start with protein. That’s a good place to start – and with that, it’s time to go back to your basics and simplicity. One of my favorites in here so far, the meatball casserole. You guys, it’s THREE ingredients. THREE (if you’re not making your meatballs homemade like me, I prefer Fresh Direct to do that for me).
This simple recipe includes meatballs, tomato or pizza sauce, and mozzarella cheese. Bake for about 25 min at 350 degrees (little longer if the meatballs are frozen) and you have a perfect meal that took all of five minutes to create. I even jazzed mine up a little bit with fresh buffalo mozzarella and some basil. My sauce was already homemade that I had canned from last summer. AND – meatballs are something my son will actually eat – and it hits the protein factor, people.
