Ah, it’s a good time to be Vegan. 39% of Americans reported trying to eat more plant-based foods in 2018 (according to Nielsen). There are more options than ever out there and easy to pick up. From Burger King offering an Impossible Burger to Target carrying easy-to-make options like these Nasoya vegan dumplings, there’s really no excuse to be plant-based these days (at least for One Meal A Day).
Going vegan or plant-based can be tricky at first, which is why it’s been helpful to learn the ropes – and pass along – about how to keep on track easy as possible.
Eating out?
Always go for french fries on the salad. It’s the Pittsburgh way! I personally try not to be “that girl” that makes everyone going out have to eat at a vegan restaurant. I do this for two reasons – usually, there is always still something pretty good on the menu. I was even at World of Beer with a friend and had an amazing bowl that I asked for their veggie burger as the “protein” on top and bartender said of course – and that he was plant-based. Two – it shows others just how possible it is to eat out vegan. Usually, by the end of trips I have others at least trying vegan or ordering something vegan (true story – just had a friend get tofu in the AIRPORT of Austin and it was delicious!).
At home?
Opt to keep quick and easy to make options on-hand. There are lots of good fridge and freezer options to keep available so if you come home late or need a snack you don’t have to reach for your kids Nutella or chicken nuggets. My favorite way to grill them up is simply in a skillet to add crunch and then toss in Sweet Thai Chili sauce.
Or, if you’re feeling fancy, spice them up by adding as a finishing top to a tasty plate. Below you’ll find simple vegetable stock risotto topped with simple sauteed spinach and then Nasoya Thai Basil dumplings.

Ingredients:
1 1/2 cup risotto rice
2 cups vegetable stock
2 cloves of garlic, chopped
1/2 yellow onion, chopped
2 cups fresh spinach
1 package of Nasoya Thai Basil dumplings
Directions:
- Start by boiling the 2 cups of vegetable stock and 3 cups of water.
- Toast rice in a saute pan with a swirl of sunflower oil then lower to medium heat and slowly add 1/2 cup of stock until the liquid is absorbed. Continue until all the stock has been added.
- Add the garlic and onion to a heated saute pan with a swirl of sunflower oil (good for high heat). Once it has browned, add the spinach until it wilts down. Cook for about 8 minutes.
- In a non-stick pan, crisp up the Nasoya dumplings. Can also use a swirl of sunflower oil here. Cook on each side for about 5 minutes and turn or until browned.
Plate it pretty. Start with a base of risotto, topped with spinach and finish with the crisped dumplings. I also like to sprinkle on fresh chopped green onion on top if I have some in the fridge. Plant-based looking better than ever!
