Corn. It will forever be my favorite vegetable no matter how many others are cooler, trendy or pack more punch. I grew up on a farm (shocker at this point if you know me) and corn on the cob was a rite of passage. We literally could hear it growing at night and counted the days till we sunk our teeth into it. It wasn’t like today when you get can get corn on the cob any day of the year. No, you waited for this – and it was worth. every. moment. To have that first bite.
I mean, really who doesn’t love corn? Corn and noodles was a staple for years and still is. Corn can go in basically any dish you make. It’s good on it’s own. It’s beautiful. Heck, even the STOCKS are cool in the fall. I could go on and on. I even wrote an ode to corn when Max loved it as a baby.
So it’s not surprise to see that I LOVE corn, and also love, LOVE, CORN.
It’s time we snacked better in 2021. I get it, those processed chips and well, are they even chips are tasty – but it’s because they make them irrestibile. However that process “plant” you’re eating isn’t really a plant anymore, and well, let’s be honest – your gut isn’t really impressed with fake food. It’s time to treat yourself better this year.
