I take full responsibility that it’s 2022 and my son still doesn’t love to “eat his veggies.” I pick my battles, and while he doesn’t eat fast food every day, I am still trying to get him to realize that things DO taste better than just mac and cheese or pizza. But it’s a battle every day. I don’t remember particularly begging my own parents for lima beans and carrots for dinner when I was 9 either, but I also feel like food was still FOOD when we were kids. Nowadays it seems so much more is “processed.”
So the same question remains – how do we get more veggies into our kids’ diet?
If you’re the mom whose kid wakes up and says they want cucumbers and a chartuccier board in their lunch tomorrow, – good for you, mom! I’m not hating, but let’s be honest, the vast majority of moms, like me, out there just settle for mac and cheese or pizza.
So I wanted to give a shout out to the brands who are hear our cries for help and have given us at least options. My current favorite? Goodles.
They’ve actually elevated the box of mac and cheese – and it’s good! I might have possibly stolen the cacio e pepe ones for myself.
Like I said, some days I love to cook – some days I just have zero time. And now I have a chance to at least not feel guilty to give boxed mac and cheese to my son.

But – if I’m getting broccoli in there – I WILL DO IT. This is the only way my son allows me to “mix veggies’ now and trust me, we’ve come a long way.
