Bringing you another guest blogger’s real-mom recipe. Check out Allison Cooper’s (founder of Project Motherhood) Finger Foods for Kids Parties – or Mini Pies for Mini Hands.
Whenever I was growing up, I had absolutely NO interest in cooking! I couldn’t put together a meal, let alone follow a simple recipe. In fact, my contribution to family dinner was always making the salad, because that was right on my skill level. Family and friends were always asking me, “What are you going to do whenever you grow up and have a family of your own?” I never really had an answer.
The first Christmas that my husband and I spent together as a married couple, I woke up on Christmas morning after a night dreaming about jewelry, perfume, and Christian Louboutins! What I unwrapped were many packages of very large cookbooks! I guess my husband wasn’t very enthusiastic about my cooking, either. I still reference these from time to time, as they helped me develop the foundation and confidence that I needed to cook up something other than boxed macaroni and cheese. (Though, after becoming a mother this has started making its appearance once more.)
Thinking back, I guess that I always had this idea in my head that whenever I graduated with my college degree, I would be handed keys to a penthouse New York City apartment AND a personal chef, in addition to my diploma. That notion couldn’t be any further from the truth. Now, here I am in my tiny New York City apartment, made complete with my tiny New York City kitchen, trying to work miracles at mealtime!
Having a busy kindergartener, I am constantly on the hunt for recipes that my five year old and I can make and enjoy together. This recipe is so simple and perfect for some quality kitchen time with your kiddos!
Finger Foods for Kids Parties: Mini Pies For Mini Hands—Because everything is just cuter when smaller, right?
What you need:
- Refrigerated Pie Crust
- Your favorite pie filling
- Muffin Tin
- Cooking Spray
- Cookie cutters (If you want to get all fancy with it!)
Directions:
- Preheat your over to 375 degrees.
- Have your kiddos grab the cooking spray and give each muffin section a good squirt! (WARNING: You may run out of cooking spray because this part is just too fun for little hands!)
- Cut the pie crust into equal pieces and stuff them in each section. You can mess with them to make it look pretty, or not, they taste the same either way!
- Fill each section with your favorite pie filling.
- If you want to show off your cooking skills, use the extra pieces of crust and cookie cutters to make small shapes and place one on top of each pie.
- Bake the pies for 30-40 minutes depending on your oven.
- Viola! Mini pies for mini hands!
Even though ours didn’t turn out looking like they came from one of the pages of my cookbooks sitting on the nearby shelf, we had a fun time making them! Overall, you really can do so many different things with this simple recipe such as deep dish pizzas, quiche, or breakfast pies. The options are really endless and you can focus the recipe around the likes and dislikes of your wee ones. It’s also a great way to practice portion control for us Mamas!
