Everyone knows the Vitamix as the supreme blender/mixer do-it-all tool for the kitchen, but are you actually using it? Not much intimidates me, but I wasn’t sure how to really get into the mix of this fancy machinery. I tried making smoothies, but they just weren’t coming out perfect – maybe I was adding too much since it was so big? Blended soups were no problem – my Butternut Squash soup was perfection, but I was stumped a little on the smoothie side.
Then I found the Vitamix Personal Cup Adapter (cue lights from heaven). This is honestly the best invention ever for your blender – it not only makes a perfect size (and perfect blend!) of smoothie, it is also an on-the-go cup. Living in NYC I’m very hesitant to add extras to my tiny kitchen space, but these will allow you to throw out a lot of your other clunky smoothie and juice bottles. They’re also large enough to fit as much as 20 ounces, and these smaller personal blenders also eliminate food waste.

Nut Milks and Butters
Reading this, you’re going to roll your eyes and say it’s too advanced but honestly, it’s one of the easiest and eye-opening things I’ve tried. You already have this beautiful Vitamix in your kitchen, so why are you wasting money on expensive organic (and carbon footprints) milks and butters you can make at home – without the cow. The farmer in me in rejoicing over this one.
One night before bed I threw one cup of organic almonds into a bowl with 5 cups of filtered water (and a tablespoon of vanilla extract for fun). That morning, it was a weird looking situation on the counter that a just dumped right into the Vitamix. One high blend later, I poured it over the cheesecloth and – presto! Beautiful almond milk! One cup of almonds made enough to fill one regular sized and one large mason jar (plenty for the week!). It’s extremely simple and it will definitely cut down on costs (not to mention preservatives, guys).
Making nut butter is really just as simple if not easier. Toss a cup of peanuts into your Vitamix (or personal cup adapter, it’s smaller) and blend away. Vitamix recommends 4 cups and special speeds here, but really, it’s your own personal discretion. Depending on how smooth or chunky you want it, you can use the stick that comes with the personal cup adapter to scrape the sides. Caution: Over processing will cause overheating to your machine. Do not process for more than 1 minute after mixture starts circulating freely.
What to really get creative? Toss in a few fun ingredients to flavor your nut butter. Some of my favorites are honey and maple syrup. Try that on a PB&J and tell me you’ll ever buy store made again. Even better? Let the kids help make it and then they feel really special taking that sammy to school the next day.
