Why do I feel like as soon as you become a mom you instantaneously gain the new Martha Stewart bone in your body? I mean, I always liked to cook, but now it’s like a challenge to be able to provide, healthy, homemade meals 3 times a day. I also felt this urge to get a crock pot. Say WHAT? Lol yes – a crock pot pot roast recipe is what I dream of at night. Thanks, Martha.
Making that many meals a day means you need to find some new ways to spice it up a bit – hence why I decided to try this recipe swap idea with Susan from The Foodette, and Doree, Top Notch Mom. They pair you up with another blogger and you make each others recipe. How fun! (wait – I hope I can do it – the pressure!) Thank fully I was paired with this awesome worldly mom Kathleen from Fearlessly Creative Mamas. While she’s traveled the world and even spent last Christmas in China, she lives in Idaho and has that country home cooking style that I grew up with!
Challenge #1 Buying a Crock Pot
Haha – well I know, being from Pittsburgh I really should own one. Us Pittburghers are notorious for our slow cooker meals. However, my tiny little kitchen doesn’t really have space for these oversized contraptions. Nonetheless, it’s time to perfect my domestic kitchen and I am the happy new owner of one Original Crock Pot! Thank god for Target and our car to get that one home.
Challenge #2 Finding Ingredients in NYC
In the land of have it all, it can be a challenge to “find” it. Especially when I remember I need to run out after an all day baptism celebration in Long Island. So, being that I needed green chilies, I ventured to the Trade Fair on 30th Ave. Also, it’s the only real grocery store open after 9 pm.
Well, explaining to the Hispanic workers that I need green chilies lead me to cans upon cans of Goya Jalapenos. DONDE? CHILES DE VERDE?? LOL – My Spanish isnt’ quite perfected yet – so they led me to fresh produce.
Hmmmmmmm. The sign says Green Chilies (Mild). Okay – mild should be mild, right?
Well here we go!
Crock Pot Pot Roast Recipe – Green Chili Stew
4 pound pork roast
1 white onion, chopped
1 large garlic clove, minced
3 tomatoes, cut up
1 7 ounce can of chopped green chilies, I use mild
3 carrots, chopped
3 potatoes, chopped
Salt and Pepper to taste
In a slow cooker, cook the roast in about a 1/4 cup of water with the onion and garlic until it is cooked through and tender. This will take about 5 hours on LOW and can be done the day before it you want. Shred the roast. Put the meat, onions and garlic back into the slow cooker and add the rest of the ingredients. Cook on low until the potatoes and carrots are cooked through, about 4 hours. Serve with other Mexican dishes, like tamales, tacos or enchiladas.
** Since I work from home, I put the roast on at 8:30 am, shredded at 1:30 pm. Dinner was ready at 6 pm. If you work outside of the house, you should definitely cook the roast the day before.
We liked the stew with cheese and chips as an appetizer. Since we’re super close were our hotel-style living neighbors, we invited them over for a treat with us!
Best for Holiday Parties and Get-Togethers
The best way to enjoy food is with the company of others! I’d say definitely make this as a nice side dish for any upcoming holiday parties or get-togethers. It makes a lot so there’s plenty to go around, and the large crock pot is easy to transport in the car!

I’m really glad you had a good experience with my Green Chili Stew. I had no idea canned green chilies were so hard to find. I mean, I took them with me when we lived in China, but in the States? Who knew? I hope your neighbors liked it too.
