Aren’t you in love with bread? Aren’t we all?
I could literally eat carbs on carbs on carbs. Keto never worked for me because I could literally make a mountain of mashed potatoes and rice on bread and eat it every day for the rest of my life.
Sadly, carbs have become a summer bods least friend. So what is one to do? Find delish LOW CARB bread. Carbonaut is only 2 grams per slice (and only 80 calories PLUS 6 grams of protein), so you can really stack it up.
In fact, fiber is proven to be one of the best things for you to eat! And luckily, this fits in well with my plant-based lifestyle. So I’ve learned to just embrace REALLY DELICIOUS HEALTHY FOODS. I know we plant-based eaters say it all the time, but the more you eat it, the more your taste buds come alive. Tasty ingredients will make ALL the difference, including your bread. It’s time to get rid of white bread. That’s so 80s right along with not using car seats and smoking cigarettes. We know what’s not good for us anymore.
And why would you do yourself such a disservice when your food can taste as good as it looks? Whether it’s a simple PB and J or trendy avocado toast, the base is where it’s at. People get really snobby over wine, I get snobby over bread.
Just LOOK how beautiful this bread is. Really. It is COVERED in seeds, and it is light and chewy. It’s one of those really good loaves that you don’t have to toast up to make it taste better.
How do I love to stack up my bread? Well, when it’s not rice and mashed potatoes, it’s an open-faced Carbonaut sprouts sammy.
- yes, I grow my own sprouts.
- yes, I made my own spreads.
You don’t have to be a master chef to do these healthy staples – and the best part? They last in the fridge ALL week, and top well on many things, and my below recipe is so delish and easy and quick in a fix. It’s a fast, simple lunch that you won’t feel guilty about.
First, you want sprouts.
I love to grow sprouts, they are the easiest, most nutritious thing you can put on your sammy. But let me let the expert explain it: How to Grow Spouts Via Doug Evans
Then you want a delish vegan, fiber-fuled dip/spread – Muhammara Dip.
I have to give a hat tip to Dr. Will and Fiber Fueled on this one. Get the original recipe here.
*roast 3-6 red peppers (seeded) for about 20 min each side at 375 (watch them crisp up, you’ll know when they’re ready)
* let them cool then remove the stem and seeds and place in blender
* add a cup of walnuts, 2 tbspn oilve oil, 1/4 cup fresh lemon juice, 1 teaspoon of cumin, 1/4 cup balsamic vinegar, 1 teaspoon of salt (and I like to add a dash or more of red pepper flakes)
*blend and enjoy!
